Ortiz Anchovies

Ortiz anchovies are caught during the coastal season, using traditional fishing methods. The anchovies are then classified by size, preserved in salt and matured in barrels for a minimum of six months. This process intensifies the flavour and texture of the anchovies. Once the anchovies reach the required maturity, they are hand-filleted and packed in olive oil.
